The new Fresco domestic blast chiller is a small-sized tool (the measurements are similar to those of a microwave) and contains 9 different functions for cooking and storing food in a healthy way. With Fresco di Irinox you cook in a gentle and respectful way, even several days in advance, thus creating a supply of fresh foods ready to be enjoyed at any time.

Description

The Fresco blast chiller gives the possibility, even to those who don't have time to cook in traditional times, to offer themselves and their loved ones an always varied and complete menu, like in the best restaurants, effortlessly. 9 functions from hot to cold to always have everything fresh:

1. Rapid blast chilling

Quickly cools hot dishes, blocking bacterial proliferation, and thus ensuring that they remain fresh and fragrant for 5-7 days. It quickly brings the cooking temperature up to +3° at the core and then stores it automatically, like a normal positive refrigerator

2. Quick freezing

The faster it freezes, the better the quality of the product is maintained. When defrosted, the dishes will be fresh, tasty and consistent as if they had never been in the freezer. Bring quickly from cooking temperature, or room temperature, to a core temperature of -18°, to then store as a normal freezer

3. Delicate freezing

Gradually lowers the temperature of hot and/or delicate foods for rapid but non-aggressive freezing. Try especially with cooked foods (focaccia, baked potatoes, leavened products) that will be kept in the freezer: it's ideal.

4. Personalized storage

Keep products that require special storage at defined temperatures. Try in particular with ice cream (-10°C), with tartare (0°C) or with melted chocolate (+40°C).

5. Controlled defrosting

This function defrosts food more quickly, evenly and without partial cooking, maintaining its natural humidity and fragrance. With FRESCO I can program controlled rapid defrosting, and find the defrosted product ready for use when I want it, stored at +3°.

6. Slow cooking at low temperature

The secret of many chefs! This type of cooking, which does not exceed 75°C, gently cooks meat and fish, enhancing their flavor and preserving all their natural humidity, consistency and nutritional properties. With FRESCO I can program cooking, first preceded by defrosting or keeping the temperature at +3°. The product will be cooked, ready to use, exactly at the programmed time, even if I'm not at home.

7. Natural leavening

It keeps the perfect leavening temperature constant for bread, pizzas, brioches, allowing the yeast fermentation cycle to be concluded in an ideal way and thus making the dough much more digestible. With FRESCO I can program the thawing of the croissants, leaven them and find them ready to be baked, always with perfect leavening at controlled temperature and humidity.

8. Cooling of wines and beverages

Wine and drinks go from room temperature to serving temperature, losing one degree per minute. In this way, you can avoid filling the fridge, but still be always ready for service, with any type of wine or drink, in just a few minutes.

9. Ready meal-regeneration

It offers the convenience of being able to program regeneration even the day before. With FRESH the product is kept at +3° (or thawed and kept at +3°), then regeneration starts automatically and the temperature reaches serving temperature (+65°). With this cycle I can keep the temperature constant at 60/65° for the entire service time, and use FRESCO to keep the dishes hot after regeneration. The delicate heat of FRESCO does not dry out the food and maintains all its initial qualities. For pastry, FRESCO can be used to melt and keep the liquid chocolate ready for use.
